For summer, this is another delectable dish everyone (or most everyone!) will enjoy that is cool, can be prepared in advance of your smashing good time and isn’t difficult to prepare. This recipe is one of my favorites. It’s also courtesy of my 98-year-old friend who found it 50 years ago (on the label of a bottle of Mayonnaise(R)).
Want an extra tip?
Put the cabbage and other vegetables through a food processor (or some such device) to chop everything up more finely. This creates a coleslaw similar to one of America’s favorites: KFC’s coleslaw.

Keepin’ It Cool, Classic Coleslaw
1 cup Hellmann’s Real Mayonnaise
3 Tbsp. lemon juice
2 Tbsp. sugar
½ tsp. salt, or to taste
2 16-oz. packages shredded cabbage & carrots
½-cup thinly sliced green pepper
½-cup chopped onions
1. Combine the first four ingredients.
2. Use food processor to chop cabbage & carrots more finely. Do same with green peppers and onions.
